The Wine-making Process The grape-harvesting time is set in order to obtain un fruit maximum while keeping the acid balance. Manual grape-harvest in small crates, hand-made sorting and picking off on a suitable table, grape by grape, to keep only the best of the grapes and eliminate all the « green ». Mutage during fermentation in order to inhibit alcoholic fermentation.
